To start: a delicately bold mixture of fried foie gras, creamy artichokes, tangy sorrel and the woody crunch of hazelnut. The main course beautifully combines colors and flavors, with pearly white cod poached in stock made with orange-yellow turmeric, served with differently textured cabbage for a seasonal side which provides a delicious contrast. Dessert, made with Loire Valley apples and pears, is delightfully comforting: a single mouthful transports you back to childhood. Poached in honey, the fruit melts in the mouth, contrasting with crunchy caramelized almonds and refreshing green apple sorbet.
