The Château la Perrière near Angers will be serving up its Christmas menu throughout December. A veritable temple of hospitality, this incredible 17th-century building and historic monument creates exquisite cuisine all year round for its guests. Treat your taste buds to a first course of green risotto and griddled scallops. Perfectly prepared, they’re followed by a mouth-watering veal steak and shiso sauce. Incredibly tender and beautifully pink, the veal is served with truffade, a traditional accompaniment from Auvergne made with potatoes, and chervil root for a dish with a beautifully silky texture. Cheese and dessert follow: a dizzyingly delicious Mont Blanc features mandarins and chestnuts for a sumptuous way to finish the meal on a high.

The first course: a mild, tangy dish, combining smoked salmon, ginger and ricotta for an undeniably delicious starter. Next: turkey takes its rightful place as the star of the Christmas show. Stuffed with mushrooms, served on a bed of crushed chestnuts, this seasonal dish’s texture works perfectly with crunchy sunchoke chips. Enjoy a plate of aged cheese and before you know it, it’s time for dessert! The bavarois with tangy raspberries and velvety smooth mousse is a delight for all the senses. There’s a magical feel at the Château Le Prieuré. Chef Richard Prouteau has created an incredible Christmas menu for the holidays, cleverly combining new ingredients and subtle flavors. New life is breathed into the traditional starter of oysters with the addition of mooli: a particularly surprising combination. Pan-fried foie gras and black olives create a warming, flavorful dish which melts in the mouth. Zander takes center stage too – served with a sprinkling of beautifully crisp hazelnuts, guests can enjoy a balanced combination of the subtly bitter, gently salty and tangy lemon flavors of this genuinely stunning dish. Next, enjoy goose served with celery purée (and a touch of vanilla) and orange gel – incredibly subtle tastes. A cold goat’s cheese sorbet is served before dessert brings the meal to a close, with an outstanding take on the traditional vacherin iced dessert, with chestnuts and blackcurrants: a sure-fire winner.
